THE END OF THE BEGINNING

I love this quote from Winston Churchill on an early success, ” This is not the end, or even the beginning of the end, but it is the end of the beginning.” We have now realized the end of our first calender month of business and the beginning is most definitely over. We have experienced all of the opening trauma, exhausting schedules, bizarre and even spooky encounters with our space, wonderful introductions to new guests, soon to be friends, as well as better than expected sales.
We have seen (as I am am sure you have as well) unexplained pools of water in strange places, vendors and farmers that are just now becoming comfortable with a new distribution system and remarkable performances by our kitchen and floor staff.
There are few endeavors as all encompassing as opening a restaurant, let alone attempting farm to table inventory as well as in house bakery and full bar, but what a buzz it delivers. I find myself aerobic on the 20th trip up and down the 20 (count them) steps to our walk in and dry storage in the basement.
Look for a few menu tweeks this weekend along with some cool blackboard specials. Some new antipasti and a few entrees have been added. We are now anticipating a consistent supply of grass fed NH beef for steak frites, burgers and specialty items. Our fish vendor has promised us Alaskan salmon from sustainable fisheries for this weekend and Claudia and I are putting together vegetarian specials that are not just bread and cheese.
I have to thank you all for so freely sharing your personalities with us. Along with the food, that is what Claudia and I wanted to experience; new people, new friends and the creation of a gathering place. There will, I promise, be more to taste, more to see and there will be more people to meet. Come and share.
