REPUBLIC is a restaurant based on the European model of a “bar.” It is a restaurant that in a casual and unique atmosphere, serves all needs and meal periods as well as offering singular specialties.

REPUBLIC will be not only a restaurant, but also a gathering place. Our menu variety and price point will allow our guests to avail themselves of our space at different times for different reasons, and will attract a diverse group of individuals.

REPUBLIC will offer full coffee and espresso menu, panini, salads, and daily entrée specials. The bar will offer wide selection of wines served by the taste, glass, 1/2 carafe and bottle, as well as unique draft beers. A limited spirits menu will also be available.

REPUBLIC will be singular among area restaurants in its menu offerings and price point. As in its European model, the restaurant will allow our guests to determine spending limits. Only just-landed fish will be offered on our daily blackboard. 100% of all of our proteins (beef, lamb, pork, chicken, duck, rabbit, and venison) will be raised in New England and humanely nurtured and vegetarian fed. In season, our vegetables will be locally sourced and our dairy at all times (parmesan cheese the exception) will be regionally produced. Salads feature seasonal produce and the entrée offerings will be market driven.

REPUBLIC bar will be designed for eating and conversation. Wine prices will be posted, as a dollar amount over wholesale and the glass, taste, 1/2 carafe will be equal derivatives of the bottle price. Spirits and beer will also be priced moderately.

REPUBLIC dining spaces will be a well-lit, artistic showroom for local and regional talent. Architectural interest will be a pre-requisite in site selection. The ability to have a crepe, panini, full entrée or a coffee will be available to our guests anywhere in the space.

REPUBLIC will be responsible in its food purchasing and use seasonal. Local, sustainable and organic products will be used whenever and wherever available.
